Autumnal Arugula Salad Ft. Butternut Squash & Bacon
An incredible tasting salad where the ingredients cook on one giant baking sheet - what could be better to accompany your favourite protein!
Ingrédients
2 cups butternut squash, peeled and thinly sliced
1 pack bacon, cooked and chopped
1/2 red onion, thinly sliced
1/8 cup toasted pumpkin seeds
4 cups arugula
1/4 cup Goat cheese (optional)
Dressing:
1/8 cup white or apple cider vinegar
2 tbsp sugar or honey
1 tbsp dijon mustard
1/8 cup olive or avocado oil
Pepper, Salt
Instructions
Peel and slice your butternut squash to a 1/4 inch thickness.
Preheat your oven to 400°C.
Line a large baking sheet with parchment paper. Place your butternut squash on the baking sheet. Over top, you will add your bacon, red onion and pumpkin seeds.
Pop your ingredients in the oven for 20-25 minutes, until the bacon is crispy and ingredients cooked through.
While it’s cooking, prepare your dressing. Cover and let it sit in the fridge until you’re ready to assemble your salad.
Once your butternut, bacon and seeds are done, let them cool slightly.
Assemble your arugula salad in a large bowl and toss with the dressing. It’s a wonderful and filling salad that will make you a star autumnal chef!
