I’m unofficially calling this a grilled BFS (Big Fucking Salad) because we get our BBQ next week so I had to settle for a cast iron sear on my glass cooktop. -_-
Rest assured, the grilling intention was omnipresent throughout my cook.
Here’s how I prepared this delicately delicious salad that uses Middle-East and Mediterranean ingredients and influences.
Prepare your ingredients:
Soak your grapes in vinegar and water for 20 minutes to clean them. I used 10 grapes for 1 salad portion. Keep them whole.
Cut 1/2 a cucumber into long triangles, salt them.
Cut your feta cheese (1/2 block) into even size triangles or squares.
Start your grill or cast iron pan on medium high heat, add a bit of oil and wipe it down with paper towel.
Once hot, add a tbsp of olive oil.
Add your cucumber, grapes and feta to the pan and let cook for approx 5 min on one side before turning and tossing.
While it’s cooking, wash and cut your lettuce of choice, I used iceberg.
The feta will release from the pan when it’s ready to flip. Let everything cook for another 3-5 minutes before plating.
Once ready, grab a bowl or plate containing your lettuce and add the grilled cucumber, grapes, feta and fresh mint if you have it! The grilled cucumber tastes like a crunchy small zucchini and it is divine!!!
I added grilled pumpkin seed and a homemade dressing with sumac, honey, chili flake, fennel and chive vinegar. (Recipe coming soon!)
Once assembled, the salad is ready to devour, please enjoy.
