Ingredients
2 cups, flour - mixed whole wheat and white
1 tsp, baking soda
1.5 tsp, baking powder
1 tsp, salt
2, whole eggs
4 tbsp, oil
1/4 cup, sour cream
1/4 cup, cinnamon honey
3/4 cup, brown sugar
2 tbsp, chia and flax soaked in 2 tbsp of hot water
1 cup, thawed blueberries
1 cup, washed and small chopped rhubarb stems
Toss fruits in 1.5 tbsp flour to coat evenly.
Instructions
Preheat your oven to 350°C.
Combine wet ingredients with a whisk. Combine dry ingredients separately. Add wet to dry, and stir using a spatula. When just combined, add your fruits and continue mixing until homogenous.
Use a potato scoop to portion the muffins out, this also gives them a nice round top.
Bake for 25-27 minutes at 350°C.
Out in the wilderness are where the best blueberries live. A great introductory berry to forage, share and enjoy.
While we went minnow trapping this week, we noticed that wild blueberry season is starting and we were able to pick a few for muffins, pancakes and handfuls. They will be in full swing in the upcoming weeks, be sure to watch for them at markets, fruit stands and in the brush of wilderness - they love growing in open, sunny areas where trees have been cleared.
