There is no candy corn in this recipe, but there is a good chance you’ll be reminded of the colors of halloween and candy corn when you make it.
Ingredients
One small onion, diced
1/4 butternut squash, peeled, diced
1/2 jalapeño, deseeded, small diced
1/2 can tomato paste
3 cloves of garlic + 1 tbsp garlic powder
1 can black beans, rinsed
1 cup corn, frozen or fresh off the cob
1/2 cup cilantro, washed and chopped
1 cup tomato juice
2 tbsp taco seasoning blend, store bought or home made. (Recipe below)
1 tbsp neutral oil, ie, olive oil or avocado oil
8 taco shells
Optional toppings:
Shredded cheese, lettuce, sour cream, guacamole and salsa.
Process
Once all your ingredients have been prepped, heat a large skillet to med-high heat.
Add oil and wait for it to expand and get shiny, this means the oil is hot.
Add onion, butternut squash, beans, jalapeño.
Cook for two minutes, then add garlic, tomato paste and spices.
Cook for another few minutes, stirring constantly.
Add tomato juice. Cook until evaporated.
Add corn, cook for two minutes.
Add cilantro, shut off heat and stir for a few moments.
Just like that, your beautiful hallowe’en inspired dinner is ready and healthy with minimal dishes.

2 tbsp paprika
1 tsp salt
