With back to school approaching, I have my families immune function in mind, so I am loading up on nutrient dense foods.
Here’s my take on a simple raw carrot ribbon salad.
3 carrots, sliced in ribbons using a potato peeler.
1 tbsp grated fresh ginger
2 tsp soy sauce
2 tsp apple cider vinegar
1 tbsp honey
1 tsp avocado oil
1 tsp sesame oil
Fresh herbs are optional and interchangeable. I chose parsley, basil and oregano.
A pinch of salt
Combine, let chill in the fridge for a few hours and enjoy as a perfect pairing for an end-of-summer family picnic.
