Eggs ‘n Salsa
Yield for 1-2 eggs.
1 tbsp butter
1/2 cup salsa verde or salsa blend
1-2 eggs
In a small skillet, heat to medium, add 1 tbsp of butter until melted.
Crack 1-2 eggs in a small bowl.
Add 3/4 cup salsa to skillet.
Heat and keep pan moving for 1-2 minutes, until salsa starts to bubble throughout.
Add your egg(s) to skillet.
Cover and reduce heat to lowest setting for 90 seconds.
Remove cover, move skillet in a circular motion. This will allow the egg and salsa to loosen. Cover for another 15-45 seconds, if needed, for desired doneness.
This is the easiest addition to your egg preparation rotation. That’s all it takes and it’s so delicious.
Tip: If you need to remove a piece of shell from your bowl, use a larger shell half to scoop it out. Works every time.
