Summer Harvest Toast
Fresh Cheese, Radish, Cucumber and Cherries with Citrus-Sambal Basil Pesto
Start with your favourite loaf of bread, sliced and generously buttered on both sides.
Using a mandolin, thinly slice a radish or two and 1/4 of a cucumber. Mind your fingers.
In a small bowl, combine
1 heaping tbsp of pesto
1 tsp sambal oelek
1 tbsp honey
Zest and juice from 1 lime or lemon
S+P to taste
Get a cast iron skillet hot and sear your buttered bread until golden brown.
Slice and pit your cherries or stone fruit of choice.
Break your fresh, soft cheese (bocconcini) into bite size pieces.
Assemble your toast and devour.
