Chocolate Stuffed French Toast Sandwich
With fresh berries, whipped cream and soft cheese filling
Easter is fun but there is always too much chocolate around. What a problem to have!
The time is now to put it to good use - within your Easter brunch!

Shaved chocolate, finely chopped fresh berries, folded together with cool whip and any soft cheese you have on hand! Add some lemon zest and vanilla and you will have something so spectacular! I filled the toast with a thick layer of the filling, dipped in a French toast egg mixture and grilled it in butter. Serve with bacon, maple syrup and mimosas!
Ingredients
Filling
2/3 cup plain goat cheese, cream cheese or ricotta
1 cup cool whip
1/2 cup of chopped or shaved chocolate of your choice
1 cup small chopped strawberry or banana (optional)
1 tsp vanilla extract
Zest from 1 orange
Pinch of salt
French Toast
8 slices of bread or flour tortilla that’s cut in half - both options work really great!
In a bowl, whisk to combine:
2 eggs
2/3 cup of milk or dairy-free milk
2 tbsp of sugar or sweetener of choice
1/2 tsp cinnamon
2 tsp vanilla extract
Instructions
Assemble your filling in a bowl, mix using a spatula.
Make the French toast egg mixture in a separate bowl.
Heat your skillet to medium heat and add a tablespoon of butter to melt.
Build your sandwich. Be generous with the filling but don’t overflow. Press on the sandwich to ensure the filling sticks to the inside of the bread.
Dip your sandwich into your French toast mixture, do not over soak. A quick dip and flip does the trick. Shake off excess liquid and add to your hot, buttered skillet.
Cover your skillet with a lid, this helps the concoction heat through entirely. Turn your heat to low-medium: 3-5 minutes is the time you’ll need to cook the first side of your bread.
Before flipping, add another tablespoon of butter to your pan. Once the first side is golden brown, it’s time to flip it and let it cook. Do not cover with a lid this time around.
Note: if you are doubling the batch, you can set your oven to 200°, and set your French toast on a sheet tray and rack to keep warm until everything is ready to serve.
