Turkey Meatball
I cannot live without this recipe! I used to make these for my private client and her family all the time. They are fail-proof and come together so easily and deliciously. You will want to try these as soon as possible!
Ingredients
1 lb, ground Turkey or Chicken
1, egg
2 cloves, minced garlic or 1 tbsp, garlic powder
2 tsp, oregano
1 tsp, basil
1 cup, breadcrumbs (if you have none, smash some crackers and use those)
2 tbsp, of mayonnaise
1/4-1/2 pack, crumbled feta (optional)
Tiny pinch of salt
Crushed chili flake
Black pepper
Lemon zest.
Sauce
1 carton, (473mL) whipping cream
4 tbsp, butter
4 cloves, garlic, minced
1/4 cup, white wine
1/2 cup, water
1/8 cup, balsamic vinegar
Instructions
Preheat a pot of boiling and salted water to cook your pasta.
To cook meatballs, heat your cast iron skillet to med-high heat and add oil.
Use a potato scooper to shape out your meatballs and yes, you can add those scoops directly to your pan if you don’t want to spend time forming your meatballs! Time saver tip!
Once your meatballs have hit the skillet, let them cook for a few minutes, turn your heat to medium, and add a few knobs of butter.
Note: If simply cooking the meatballs, once flipped, place them in a preheated oven at 375 to continue cooking for 15-minutes.
Deglaze your pan with 1/4 cup of white wine or cooking wine.
Once the liquid has cooked out, add a 1/4 cup of water.
Once the second round of liquid has cooked down, it’s time to flip your meatballs.
Add a few knobs of butter, flip meatballs, add the rest of your minced garlic.
Cook down for 2 minutes and deglaze with balsamic vinegar, cook for another 5 minutes.
Add 473mL of whipping cream directly to your skillet and let simmer.
Drop your pasta in salted boiling water.
Taste your cream sauce, adjust salt and pepper to taste.
Add 1/4 cup of pasta water, a knob of butter and lemon zest.
Remove meatballs from sauce and transfer to a plate to rest.
Strain pasta, add to sauce skillet and toss. Cook together mixing constantly for 2 minutes.
Plate pasta with meatballs, fresh lemon juice and fresh oregano.
