This one pot meal was a life saver for me this week. With a sick child, man gone hunting and running on my last ounce of strength, this comfort meal came together in just over 20 minutes.
I used the food processor to do most of my chopping. This allows for maximum flavour on minimum time.
Serves: 2 people with leftovers.
You can easily double this recipe for a bigger batch!
Ingredients and Instructions
1/2 onion
3 cloves garlic
2 cups spinach and arugula (opt)
Juice of 1/2 lemon
2 tbsp olive oil
1 tsp salt
2 tsp pepper
1 tsp oregano
Combine the above ingredients in a food processor and blitz until they are all chopped.
You will need to set aside:
2 cups mushroom and chicken stock combined.
1 cup par-cooked and chopped chanterelles or sliced crimini mushroom
1 cup parmesan
1/4 cup unsalted butter
2 sausages, cut into pieces
In a medium-hot skillet, add
1 cup dried orzo
Stir with a wooden spoon for 2-3 minutes to toast the orzo.
Add your food processor ingredients and mushrooms to your hot pan and cook down for 4 minutes.
If using uncooked sausage, add now. Cook for a few minutes.
Next, gradually add your stock and let cook for 10-15 minutes, until liquid has been completely absorbed or almost.
If using pre-cooked smoked sausage or pre-cooked bacon, add now. Stir to heat through for 2 minutes.
Turn down your heat, add your butter and parmesan and stir continuously until combined. This will create a luscious pan sauce.
Turn off your heat, add the other half of the lemon juice and this easy one pot meal is ready to comfort you and your family.
