Preheat your chosen pot on medium-high heat, add a tbsp of vegetable oil.
Chop a red pepper, add it to your pot. Add one package of mild or hot Italian sausage or vegan sausage of your choosing. Stir it, break it up and wait for it to brown and cook through.
Add to your pot, 2 cups of water with a 1/4 of a stock cube for flavour.
Add two jars of your favourite sauces. I used Classico Tuscan style olive oil and garlic (contains olives) and their Four cheese Alfredo sauce.
Add a pinch of salt and black pepper. Stir to combine.
Add a half bag of dried penne pasta and half a container of spinach.
Combine and periodically stir until it reaches a boil.
Once it is boiling, reduce heat to low, cover and let it cook for 7 minutes.
Add the rest of your spinach, stir it up until spinach softens.
Dish up with some Parmesan cheese and that’s your meal.
