Tuscan Comfort Soup
Ingredients
2 tbsp, olive oil
1/2, white onion
4, cloves of garlic (minced)
1, red bell pepper
4, Yukon Gold Potatoes
3, Italian Style or Ham Smokies (Cubed or Taken out of casing to crumble)
2 handfuls, chopped spinach (add at the very end)
1 quart, low sodium chicken stock
500 mL, water
1.5 tsp + more to taste, salt
1 tsp, black pepper
2 tsp, oregano
1 tsp, fennel
2 tsp, paprika
1 tsp, crushed chili flake
Instructions
Prepare all your ingredients: cut them to the same size: approx. 1” cubes.
Preheat a large stock pot to high heat, add your oil and sauté your onions and peppers. After a few minutes of stirring and cooking, add your garlic.
Next add your potatoes, sausage, seasonings and stocks/water. Bring to boil.
Bring the heat to low until the potatoes are fork tender and cooked through. Add your chopped spinach, stir and remove from heat.
To serve, add a dollop of greek yogurt or sharp cheese with toasted garlic bread.
