Imagine having an ultimate adaptable recipe at your fingertips that can be whipped up with one hand and in one bowl!
This batter does it all. The perfect small-batch recipe for pancakes or waffles (serves 2 people) or baked loaf for a quick bread or muffin. It will accept any and all ingredient combinations, savoury or sweet!
Ingredients
1 cup flour
1 tsp baking powder
1/8 tsp baking soda
1 tbsp vegetable oil or 1/4 cup Greek yogurt
3-6 tbsp sugar
1 pinch salt
1 egg
3/4 cups milk (1/2 cup if adding 2 bananas)
1 tsp vanilla (if doing a sweet version)
Instructions
Preheat your oven to 350°F and prepare a standard loaf pan (8-1/2 x 4-1/2 x 2-1/2 inches). Line pan with parchment.
Combine all ingredients in a bowl and mix until a smooth batter forms.
If you deviated from the recipe (i’m a pro at doing this - tiny taste test your raw batter (at your own risk) - the BEST tip for freestyle baking.
If cooking batter as pancakes or waffles, proceed as you typically would. Lightly grease your surface and cook for a few minutes on each side until cooked through. Low-Medium heat is best. For pancakes, I use a lid to cover them when they are on their first side of cooking. This helps them steam and cook through faster, without getting overly browned.
Loaf: Pour half the batter in the prepared pan. If doing a marble loaf, make two layers: dollop your filling and swirl with a toothpick. Cover with remaining batter and repeat the marble pattern on top.
Into the oven it goes to bake for 30 minutes or until your toothpick comes out clean when the loaf is poked.
Bonus Recipe: Crunchy Coffee No-Tella
In a food processor, combine
1/2 cup toasted hazelnuts
1/4 cup brewed coffee
2 tbsp cocoa powder
2 tbsp honey
2 tbsp sugar
Blitz until a homogenous consistency forms and add it to your batter according to the instructions.
