Hello my cuties! It’s time for a jam-packed double episode of Meals in a Week! Happy (M)Other’s day to all the parents everywhere! Today’s post is free for all! Motherhood is a RIDE and yes, I will take a weekend to celebrate this fact!
There are a few new faces joining us this week and I want to thank you ALL for choosing to read and scroll here!

Meals in a Week Ep. 9 - Food that is comforting, sublime and prep inclined!
M- Alfredo-Cauliflower Sauce with Egg Noodle and Baked Chicken Breast (Protein cooked ahead of time.)
T- Turkey Meatballs (Recipe Here) with Wild Rice (Cooked ahead of time) and Steamed Broccoli
W- Cottage Shepherd’s Pie (Made weeks ago and taken from the freezer)
T- Baked Salmon, Basmati Rice, Cauliflower and Peas (See last week for baked salmon instructions.
F- Sushi Dinner and a delicious Ube and Coconut Cake!
S- Brunch at Pineridge Hollow and Pizza for dinner

S- Pizza: Pesto, Spicy Italian Sausage, Broccoli and Cheese.
BAKES - We are currently a full fledged bread making household in an effort to stay frugal, and also - I really just enjoy making bread a few times a week.

Flour Tortilla Shells! Fun and delicious but way too time consuming for the yield!
BREAKFASTS: Veggie packed egg cups, sandwiches using the latter and avocado toast.

Tuscan Comfort Soup Ingredients 2 tbsp, olive oil 1/2, white onion 4, cloves of garlic (minced) 1, red bell pepper 4, Yukon Gold Potatoes 3, Italian Style or Ham Smokies (Cubed or Taken out of casing to crumble) 2 handfuls, chopped spinach (add at the very end)
T- Wild Rice Salad, Trout and Carrot Sliders with Curry Mayo (Recipe Here)

This wild rice salad is completely interchangeable based on what you have in your ingredient arsenal. Forever on our summer meal accompaniment rotation, it is nourishing, fresh and sublime. W- Budget Cut Steak and Rice Noodle Stir Fry
T- Dip Dinner! Spinach Artichoke and Spicy Bean Dip
Served with tortilla chips, fresh vegetables and bacon chive toast. I nutrient reinforced these dips with nutritional yeast, greek yogurt, vegetables and bacon drippings. (ohhh, yes!)

F- Simple BBQ Chicken Thighs, Bean and Ranch Dip on Homemade Flour Tortillas served Taco style
Chicken marinated in 1 cup simple brown sugar syrup, 2 tbsp cumin, 1 tbsp chili powder, 2 tsp Montreal steak spice and 2 tbsp vegetable oil.
S- Chicken Leftovers, Basmati Rice, Peas and Corn
